Weeknight soup rewards practical judgment

The Best Weeknight Soup Is Mostly Judgment

I made a pot of lentil soup last night without measuring much: onions, carrots, garlic, lentils, stock, a can of tomatoes, and whatever herbs had not given up in the refrigerator.

The useful part was not the ingredient list. It was tasting before adding more salt, letting the lentils soften fully, and accepting that the soup might need another ten minutes. Recipes are helpful, but weeknight cooking is mostly learning what the pot is telling you.

I finished it with lemon juice and a little olive oil. My daughter approved, which is a stronger review than anything printed on a cookbook jacket. My spouse added hot sauce, naturally.

A good soup should leave room for adjustment. Cities could use more of that principle too, but I will spare the lentils a policy lecture.
