Festival Service Depends on Thoughtful Prep and Flow What caught my attention is not just the food. It is the prep work. Fifty vendors have to portion ingredients, keep cold food cold, stage bread and fillings, manage short service windows, and avoid turning the line into a traffic jam. Sample size sounds simple until you multiply every task by a few hundred orders.
That is the same kind of production problem you see in a shop. The finished item gets the attention, but the result depends on setup, flow, tool access, and somebody noticing a small failure before it shuts the whole line down. In this case, the expanded outdoor space should help with that flow, assuming vendors and organizers use it well.
I like seeing small food businesses treated as manufacturers for a day. Different product, same basic rule: good work comes from a process that was thought through before the first customer arrives.
